Cloud kitchen
is a delivery-only restaurant, you read it right! It’s a restaurant where food is
prepared delivery-only meals and not for dine-in. It’s also known as the virtual
kitchen, shadow kitchen, commissary kitchen, ghost kitchen or dark kitchen.
COVID pandemic
has severely dent into the business of traditional restaurants. With food
delivery apps keeping the restaurant industry alive, cloud kitchen has become a
smart way of running a business.
With savings on infrastructure, labour, stock cloud kitchens
have reduced the cost of overheads
For those seasoned home chefs cloud kitchen opens a world of
new opportunities which would otherwise, would have never been available. Opportunity
presented itself in the form of demand for “Onam Sadhya” in 2021, when the restaurants
remained shut and the demand for a sumptuous sadhya was huge.
This demand later got extended in the form of “pothichoru” or home made meals. Home bakers too joined the bandwagon and made their presence felt.

FSSAI, GST Registration, NOC from the fire department, etc are
the mandatory items, followed by registration in food delivery aggregators like
swiggy or Zomato.
